Abstract: The growth pattern of okra pod after flowering was studied in detail. The changes of chemical components and physical properties of okra pod for a period between flowering and harvesting maturity was investigated to determine the optimum harvesting maturity. Storage and handling problems for harvested okra pods were discussed. It was found that the harvesting maturity of okra pod was 4 to 6 days after flowering. The optimum storage temperature of okra pod determined experimentally was at 12℃.
