Title: On the Titration Curves of Soy Bean Proteins(Agricutural Chemistry)

Abstract: 1. To verify the hypothesis on the deamination mechanism, the titration curves of various components of soy bean meal different in storage period have been determined. 2. From the shapes of the curves the process of the denaturation can be elucidated principally in agreement with the previous data. 3. The cause of the denaturation has been discussed. The report was performed in the Chemical Laboratory of Nutrition, Institute of Chemical Research, Kyoto University. The writer has great pleasure in expressing his sincere thanks to Prof. K.
